Taro Pancakes
Chinese Style



Taro Pancakes
 

Ingredients:
1 egg 2 C. packaged buttermilk biscuit mix
1 tsp. salt 2 C. diced cooked taro
2 C. water ¼ C. chopped Chinese parsley
1 TBS oil Dash Aji-no-moto (MSG)
½ C. char siu (pork) ¼ C. chopped green onion
½ C. chopped ham 2 Chinese sausages

Heat oil in skillet and fry sausage lightly for 2 minutes. Add ham and pork; stir-fry for 2 minutes. Remove from heat and stir in green onion, parsley, taro and MSG. Set aside.

Combine biscuit mix, salt, egg and water; beat until smooth. Stir taro mixture into batter.
Heat griddle and oil lightly. Drop batter onto griddle and cook until golden brown, turning once.
Makes 2 dozen 4-ince or 4 dozen pupu-size pancakes.
